Spicy flounder bake
Ingredients Needed - 4 Servings
2 Cups Rice
1 Cup Chicken Bone Broth
2 Cups Water
1 Can Red Kidney Beans
1/2 Can Original Rotel
1 Packet Sazon
2 Tbs Complete Sazon
Grilled Pineapple and Habanero Hot Sauce (Drizzle as much heat as you can handle.)
1 Fresh Jalapeño (Sliced)
2 Tbs Sugar Daddy
2 Tbs Adobo
2 Tbs Old Bay
4 Flounder Filets
Cooking Steps
In a two inch deep baking dish mix together the rice, broth, water, kidney beans, packet of Sazon and Complete Sazon.
Bake at 400 degrees for 15 minutes.
Remove from oven and mix the rice and beans.
Gently add the flounder filets on top of your rice and beans. Continue by drizzling the hot sauce over the filets. Then proceed to add a generous layer of Sugar Daddy, Adobo and Old Bay over the entire dish.
Next layer your sliced Jalapeño on the filets and garnish the dish with your Rotel.
Back into the oven at 400 degrees for 20 minutes.
Remove from oven, gently remove filets onto serving plates, mix the rice and beans then add them to the serving plates as well.
